Sweet potato salmon hash


This has to be one of my favorite Saturday late morning type of dish. Its sweet, savory, and little spicy— but if you’re not into spicy you can forget the cayenne diane.

Im a hugeee brunch person, mostly because I love the idea of having creative, and flavorful foods for breakfast that arent your typical bread with butter, oatmeal, peanut butter toast, or cereal. You can have so much fun with brunch! Some do’s and dont’s for this meal. . . dont overcook the salmon, A do, crisp up the sweet potato by putting them on broil for 5-10 minutes after baking. Also , this dish taste just as good without the fish. Check out the gallery for the dish below!

Marinade for Salmon:

1/2 tsp sea salt

1/4 tsp paprika

1/2 tsp pepper

half of a lemon

1 tbsp olive oil

3 garlic cloves minced.

RECIPE.

Seasoning

potatoes:

1/4 tsp Paprika

1/2 tsp salt

1/4 tsp pepper

1/2 tsp garlic powder

1/4 tsp cayenne pepper

what you’ll need.

  • 7 ounces of Salmon -under a half a pound.

  • 2 Sweet potatoes

  • Small handful of of cilantro

  • Olive oil

  • Two eggs

  1. Pre-heat your oven to 400 degrees. set aside all your condiments for the potatoes and the salmon marinade.

  2. Dice up your minced garlic and prepare all the condiments you will need for both the marinade and the potatoes.

  3. In a bowl prepare your salmon marinade, then place your salmon in the bowl and set aside while you prepare the rest of the dish.

  4. Begin to peel and dice the sweet potatoes. Place the diced sweet potatoes on a baking pan. Drizzle some olive oil, minced garlic, and the rest of your seasonings over the potatoes. Mix it all together with a spoon so that the seasonings cover the potatoes completely. Place your potatoes in the oven for 35-45 minutes.

  5. Mince some cilantro to garnish the potatoes and add in some extra flavor.

  6. Once the potatoes are cooked through for about 30 minutes-then you can start cooking your salmon. You dont want to cook the salmon too early because it cooks quickly.

  7. slowly begin to heat a cast Iron pan on the stove top. Drizzle some olive oil. After 5 minutes add the last of your minced garlic.

  8. Saute the garlic in the olive oil until slightly golden over med-low heat.

  9. Add your salmon to the cast iron pot and cook each side for about 5-7 minutes. Make sure you dont overcook your salmon.

  10. Once the last side of your salmon is cooking, you can set a small pan to the site and fry two eggs. I fry my eggs with olive oil but butter works just as well too! Cook until over-easy or however you prefer your eggs.

  11. Take out your potatoes and add your cooked salmon over the potatoes; Add your fried eggs over the potatoes as well; Garnish with fresh cilanto and a pinch of sea salt so that your eggs have some extra flavor too.

  12. Savor every bite!
