sausage, peppers, quinoa & potatoes

This one is a quick one, and it can ACTUALLY be done in 30 minutes. ha. the great thing here is, sausages are usually seasoned already, so all you have to do is chop them up and focus on seasoning our potatoes right, not overcooking the sausages, cooking the quinoa and sauteing the peppers just right! —check out our gallery for this warm dish.

what you’ll need.

  • Garlic

  • Green or red peppers.

  • 3 Russet potatoes.

  • Half of a white onion.

  • 2 cups of quinoa.

  • 2 sweet italian sausages.

  • 1 tsp paprika.

  • 1 tsp sea salt.

  • 1 tsp black pepper.

  • 1 tsp of fresh rosemary.

    SERVING IS FOR TWO

RECIPE.

  1. Pre-heat oven to 400 degrees.

  2. Mince 3 cloves of Garlic.

  3. Peel russet potatoes.

  4. chop into cubes or thick pieces.

  5. Place them on a baking pan with olive oil and toss them together with all your spices and some minced garlic for extra flavor.

  6. Place potatoes in the oven for 35-45 minutes.

  7. Wash peppers, gently slice them.

  8. Chop sausages.

  9. In a pan, sauté half of your minced garlic with some olive oil for 2 minutes; Then place quinoa on low heat to a simmer with water - 1:1 ratio. Cook for 15-20 minutes.

  10. In another pan place peppers, onions to saute for 6-8 minutes with olive oil on a medium heat.

  11. Once the peppers loosen up and soften a bit you can throw in those chopped sausages! and kick up the heat. I did add just a pinch of garlic powder and paprika to the sausages as they sauteed with the peppers for some extra flavor!

  12. Check on your quinoa, if it is fluffy/chewy, then it is ready to serve. Once your sausages are fully cooked you can turn off the heat.

  13. And lastly, the potatoes should be done at this point. Put a fork in and check if its soft on the inside, and slightly crunchy on the outside. Once it’s done, serve altogether and savor it all :)
